  2. dice red pepper..
  3. chop green onion..
  4. in a skillet or pot add oil, onion, olives, red pepper, chili powder, cumin, garlic and lemon juice..
  5. turn heat on high and cook for only 3 minutes until hot and parsley gets soft and wilted.
  6. meanwhile quarter the tomatoes..
  7. add to pot\skillet. saute for another minute until tomatoes are just warm..
  8. turn off heat and add rice. toss to coat..
  9. pour into serving bowl..
  10. serve..
